Is 16 Gb of memory too much really for a gaming rig running win 7 (64bit) I mean will games use that much?

Simply put, if you are not using half of that then no need.

Do you plan on using applications that need a lot, several virtual machines etcetera? Does your currently applications even come close to 8GB? If you just use it for gaming then no need, if you plan on doing stuff like video aimed things then it would be worth it. If you have the need for a RAMDisk then it would be worth it. If it is cheap its a good backup too.

well i do a bit of video and photoshop stuff as well plus yes i run virtual machines from time to time lol. basically i got it at a bargain price thought it might futureproof my system a little. then i suddenly thought 16gb is a lot of memory lol.

If you do that stuff AND can use it then just add it, might be worth keeping as a backup or something though if you really have no need :D
